There are 3 things you can try that I can think of.
1. Fully uninstall Minion, its possible the Minion libs directory has some old libraries. Judging that the log files you attached are from 2014 this may be the case. Once uninstalled visit the directory Minion was installed in (default: C:\Users\<your windows username>\AppData\Local\Minion) and delete everything that was left over (some times uninstall doesn't remove everything).
Now install Minion again and hopefully everything now works!?
If that doesn't work...
2. Download & install the 32bit version and see if that works for you? I've seen on some 64bit systems where java for some reason only wants to run in 32bit mode.
If that doesn't work...
3. Is Minion installed in the default path? If so can you open a terminal window and type the following and paste any errors you see in the terminal here?
java -jar C:\Users\<your windows username>\AppData\Local\Minion\app\Minion-jfx.jar
