It is possible
SavedVAriables ARE files on your harddrive so you need an addon to dump the stuff you need to this addon's savedvariables and afterwards open them with a text editor to read them again.
There are addons doing this for the guild bank data but not the inventory.
BUT I know by chance that one addon is storing your adata already in the savedvars:
"Inventory Insight from ashes"
Install and use it on your inv and banks and chec the savedvars after logout if everyting is in there which you need. But the content is NOT compatible to excel or a csv file. You get a table with contents and need to check which table contents are what stuff.
