First glance, it doesn't appear you can change them, nor their color. Specifically, someone asked about changing the little white diamond icon above sorcerer summons. I looked and best I could find was COMBAT_UNIT_TYPE_PLAYER_PET - but I don't think this is it.

Looking over another addon called PapaCrown, it used MAP_PIN_TYPE_GROUP_LEADER but I couldn't find anything similar to that in regards to player summoned pets.
