I've made a fix for the bug that causes custom idle animations to often play immediately after taking a step! (As mentioned in my previous comment, this basically just makes it so the global 'Delay' timer actually resets itself if you stop idling.) There is no option for a delay between emotes. Please see my answer to Katnipthief above, for how the 'Minimum Time' setting works. What you're asking for is the 'Delay' setting on top of the emotes list. In seconds, you can define a delay which should pass, before an emote is being played after you stopped moving or took an action....

+1 for the suggestion to add a keybind to toggle display! Most addons that have UI elements also have an optional configurable keybind to disable them, which is nice because not everyone wants to see these elements all the time, and disabling them through the ingame Add-Ons menu means having to wait for the entire UI to reload!
