For the Mac ESO install at least you can just adjust the path via Minion Options > Game Addon folder Path and drill down to the new Addon folder in liveeu:
~/Documents/Elder Scrolls Online/liveeu
One thing. I found before that when entering a new folder path it still shows the previous addons as Installed even though they wont be now. Even after a quit and relaunch it still shows this, like it is not checking the new path.
To fix this I Uninstall those shown within Minion then re-install. They are then correctly installed to the new Addon folder.
