I) Press the cog icon in the corner of the button you want to change. Select from the dialog and press the Save button

II) Hand edited the files. You can edit the default lua table in the saved variable file or the language localization files. The saved variable file is created by the game in a different folder then the add-on. The language files EmoteData< XX >.lua in the subdirectory of the add-on.
